Biology question important surface area to volume?

i did a biology practical on surface area to volume. i had to cut red agar jelly into three blocks all of different sizes. after that, i had to place it in sulfuric acid for 10 minutes. the red agar colour started to become clear starting from the outside moving inside. what causes the block to become clear?
